Cooking a delicious snack of fried eggplant
For cooking, we need good quality fresh eggplants. They should not be soft. It is advisable to use vegetables of uniform shape, so that they are convenient to cut. Rinse the blue ones with running water, pat dry with a towel. Cut tails on both sides. Arm yourself with a sharp knife and cut into thin slices along the entire length of the vegetable. Season a little with salt and ground pepper. Prepare a baking sheet with parchment paper. Lightly grease with vegetable oil. Lay the eggplant tongues. Sprinkle with vegetable oil on top. Preheat the oven to 190-200 degrees. Send the eggplants to the oven for 15-20 minutes until soft, so that the final result is easy to slice the slices into a straw.
And now let's do carrot stuffing. Take carrots, peel and rinse. Crush on a medium grater. Heat some vegetable oil in a skillet. Add the grated carrots and fry over moderate heat until soft. Let the roasted carrot cool a little.
From the greens take parsley, dill, basil, celery, cilantro or just a little bit. Rinse, pat dry, chop finely. Add to carrots.
Peel the garlic cloves. Skip through the garlic press. Add to the rest of the ingredients. Season the filling with salt and ground black pepper and mix well.
Eggplant slices smear with a thin layer of mayonnaise or mix sour cream and mayonnaise.
Spread the carrot filling on top. Lightly press down with a fork so that the filling attaches to the mayonnaise layer.
Wrap in rolls.
