Ingredients for rice casserole with minced meat in an oven in Mexican style

  • One medium pumpkin
  • Boiled rice - 1 tbsp.
  • Minced meat - 200 gr.
  • Onion - 1 pc.
  • Tomato - 3-4 pcs.
  • Cheese (hard is better) - 200 gr.
  • Sour cream - ½ tbsp.
  • Eggs - 4 pcs.
  • Sweet pepper - 3 pcs.
  • Salt and spices (to taste)

Recipe for cooking rice casserole with minced meat in an oven in Mexican style

First we need to clean the pumpkin. There is one small secret here: to make it easier to peel, we pierce the skin of the pumpkin with a knife in several places and warm it in a microwave for a couple of minutes. Then cut the top and bottom, cut it lengthwise and carefully remove the skin with a knife or vegetable peeler. Remove the seeds from the middle. Now rub the pumpkin on a grater and combine with rice cooked in advance.

Add to this mass of sweet pepper diced. You can add spicy paprika, basil or other spices.

Now we need to fry the minced meat with chopped onion. Fry in vegetable oil for about 15-20 minutes.

Beat with a mixer or whisk eggs and sour cream until smooth, add spices.

After this, we mix the scrambled eggs with sour cream with the fried chilled minced meat.

Now we mix the minced meat with the pumpkin mass, mix and lay out the resulting billet in the baking dish.

Next, wash and cut the tomatoes and lay out the "circles" on the resulting mass.

Sprinkle with cheese on top and place the baking tray in the oven, preheated to 200 ° C.
